Date and time are first-class field types, not text boxes with hopeful labels — so every booking arrives structured and sortable.

Offer set slots, not an open picker
Swap the open time picker for the times you can actually do, and set a limit per slot so it stops being offered once it fills.

The booking lands as a submission
Every request arrives timestamped in the same table as the rest of the answers — confirm it, filter by day, or export the week.
